Block B Chardonnay picked a little later, destemmed, settled, and fermented using specialist yeasts in French Oak.The juice on pressing and settling tasted of rich honey and mead, during ferment grapefruit and citrus flavours predominated. French Oak barrel (30% new) ferment, their judicious use, and resting on lees, have complement this wine with pleasant flavours of white peach, nashi pear, honey dew melon with a clear crisp acid line and some lime.
